Olivesandlamb Turns 1!
This past Monday marked the 1 year anniversary of the creation of Olivesandlamb! Actually, that’s a lie because my first post was on July 12. However, my first recipe post was on July 13th! And what good is a celebration if there isn’t any cake?! We’re officially celebrating Olivesandlamb’s first birthday with a Coconut Lime Cake!
Time Flies
It’s honestly crazy to think that it’s been a year since I started my blog. Having my own blog where I could post my own recipes had been a dream of mine, but I never thought I was capable of doing it. I had no idea where this blog would take me, but I’m so darn happy that I continued. Having this blog has helped me gain opportunities and reach so many people around the world. It’s weird to think that I still see myself as an amateur food blogger, yet others feel so inspired by my work. It really goes to show how impactful your passions can be for others.
I’ve been able to learn so much about food styling, recipe development, and photography through starting this blog. While I have a lot to learn, I’m so proud of how far I’ve come. I still have the occasional bugs with my website and photography issues that I have no idea how to fix, but seeing as I’ve made it to a year, I have faith that I’ll find ways to power through! Thank you to all of you who’ve supported me since the beginning, middle, and now! I truly don’t know where my blog would be without your support!
A Celebratory Cake
To be honest, I intended to share a different recipe to celebrate my 1 year blogiversary but it didn’t turn out as anticipated. Nonetheless, this Coconut Lime Cake is still a worthy recipe for this celebration! It’s the perfect sweet and tart treat that fits the summer vibes! It has a tender coconut cake base with a hint of lime then it’s topped with a zesty lime glaze! This is a great recipe that will take you away to your dream tropical destination!

Coconut Lime Cake
Ingredients
For the Coconut Lime Cake
- 2 1/2 cups All Purpose Flour
- 1 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 cup Softened Unsalted Butter (1 stick)
- 3/4 cup Granulated Sugar
- 1 Large Egg
- 1 tsp Vanilla Extract
- Zest from 2 Limes
- 1 cup Coconut Milk
- 5 tbsp Lime Juice
For the Glaze
- 1 cup Powdered Sugar
- 1 tbsp Coconut Milk
- 1 tbsp Lime Juice
- 1/4 tsp Vanilla Extract
- Pinch of salt
For Garnish
- Additional Lime Zest
- Toasted Coconut Flakes
Instructions
For the Coconut Lime Cake
- Preheat the oven to 325˚F. Spray a 9×5 inch loaf pan with cooking spray and line it with parchment paper. Set it aside for later.
- In a medium sized bowl, combine the flour, baking powder, and salt. Whisk until the ingredients are evenly distributed.
- In a large bowl, add in the butter and sugar. Cream the butter and sugar together until it becomes light and fluffy. Add in the egg, vanilla extract, and lime zest. Mix until incorporated.
- Add in 1/3 of the flour mixture into the bowl and lightly fold it into the batter. When most of the flour has been incorporated, add in half of the coconut milk and half of the lime juice and mix until combined. Add in half of the remaining flour mixture and fold it into the batter. Mix in the remaining coconut milk and lime juice. Then add in the remaining flour, folding it in until combined.
- Transfer the batter into the loaf pan. Shake the pan from side to side to get the batter to settle evenly. Place the pan on top of a sheet tray and bake for about 1 hour and 5 minutes. If you insert a toothpick into the center of the bread it should come out clean. Remove the bread from the oven and allow it to cool for 5 minutes. After 5 minutes, remove the bread from the loaf pan and allow it to cool on a wire rack.
For the Glaze
- Combine all of the ingredients in a bowl and whisk until the powdered sugar has completely dissolved. When the bread has cooled, pour the glaze over the bread and garnish it with toasted coconut flakes and lime zest. Enjoy!
