Brown Sugar Plum and The Sun
Hello and welcome back to Olives & Lamb! I hope you all had a fabulous weekend because I know I sure did! Even though it was blazing hot in Los Angeles, my sister and I managed to get a few sweaty hikes in! To end the weekend, I made this fantastic Brown Sugar Plum Cobbler! Sweet and juicy plums baked with a spiced brown sugar biscuit topping. And of course, it’s an absolute must to serve this with a giant scoop of vanilla ice cream!
The Last Hurrah
This recipe is near and dear to my heart because I almost feel like it’s my last hurrah for the summer — recipe-wise. I think this Brown Sugar Plum Cobbler perfectly captures the transition of summer into fall in one bite. Stone fruits and cobblers are all the rage over the summer, but we also have spices, like cinnamon and nutmeg, that give us that fall warmth we love so much. The brown sugar adds a caramelized maple flavor that’s also reminiscent of the fall. The plums soften and create a sweet sauce as the juices release. Then the biscuits add a slight crunch and absorb that delicious sauce. And with a scoop of ice cream, you’ll have the perfect contrast of coolness to compliment the hot, bubbling cobbler!
Falling into Fall

Brown Sugar Plum Cobbler
Ingredients
For the Plums:
- 1/2 – 1 Tbsp Unsalted Butter (for greasing)
- 12 Plums (cut into wedges)
- 1 cup Dark Brown Sugar
- 1 Tbsp Cornstarch
- 1/2 tsp Kosher Salt
- 1/2 Tbsp Cinnamon
- 1/2 tsp Nutmeg
- 1 Tbsp Lemon Juice
- 1 tsp Vanilla Extract
- 1/2 tsp Almond Extract
For the Biscuit Topping:
- 2 cups All Purpose Flour
- 1/2 cup + 1/2 Tbsp Granulated Sugar
- 1/2 cup Dark Brown Sugar
- 2 Tbsp Baking Powder
- 1 Tbsp Cinnamon
- 1/2 tsp Kosher Salt
- 1 (4 oz.) Stick Cold Unsalted Butter (cut into small cubes)
- 1/2 cup Boiling Water
Instructions
For the Plums:
- Preheat the oven to 375˚F. Use the butter to grease the bottom and sides of a 9×13 inch baking dish.
- Add all of the ingredients for the plums into a large bowl. Toss the ingredients together until well combined. Transfer the mixture into the prepared baking dish, arranging the plums in an even layer.
For the Biscuit Topping:
- Add the flour, a 1/2 cup of the granulated sugar, brown sugar, baking powder, half of the cinnamon, and salt to a large bowl. Mix the ingredients together until they are evenly distributed. Work the butter into the dry ingredients until you get small pea-sized crumbles.
- Pour in a little bit of the boiling water at a time. Mix it into the dry ingredients with a fork until you get a biscuit-like dough. You may not need to use all of the water. Once the dough forms, place golfball sized spoonfuls of dough on top of the plums.
- In a small bowl, combine the remaining 1/2 tablespoon of granulated sugar and remaining 1/2 tablespoon of cinnamon. Mix until the two blend together. Sprinkle the cinnamon sugar on top of the biscuit dough.
- Bake the cobbler in the oven for 40-45 minutes until the biscuits are fully cooked and lightly golden brown. Remove the cobbler from the oven and allow it to sit for a few minutes before serving.
