The City of Tacos and Burritos
Living in Los Angeles you’re bound to end up trying a bunch of burrito and taco joints, which isn’t the worst thing if you ask me. Burritos and tacos have quickly become one of my favorite foods, but you can’t forget the condiments. Sometimes the condiments alongside a meal can give it a complete makeover. One of the restaurants that I’ve become a regular at is Pablitos Tacos. They specialize in Peruvian style burritos, tacos, quesadillas, and mulitas. And as a bonus, they also serve pizza! You wouldn’t think it would be that good, but I promise you it’s amazing. The best thing about Pablitos Tacos though is their “crack sauce.” Its a creamy, green, garlicky sauce that is heaven in your mouth. It’s so good that I had to create my own “crack sauce.” My Charred Scallion Jalapeño Crema is going to become a staple sauce in your household.
Sauce it Up
This Charred Scallion Jalapeño Crema starts with, you guessed it, charring scallions and a jalapeño. The char on them gives the sauce a slight smoky flavor. Then it’s blended with mayo, crema, lime juice, cilantro, garlic, and shallot. It turns into a creamy, salty, spicy, zesty, and garlicky sauce that enhances all of the flavors from your main dish. This Charred Scallion Jalapeño Crema pairs so well with tacos and burritos. However, you can also use it as a sauce for fries, chicken, or steak! Honestly, this sauce is so good it pairs well with anything.
Meal of Your Dreams
One of my absolute favorite foods is a breakfast burrito. So of course, I had to use this sauce on a breakfast burrito. And just because you read up until this point I’ll let you know what was in my breakfast burrito:
- Flour Tortilla
- Cheddar Cheese
- Hash Brown Patties (like the McDonald’s Hash Browns)
- Soft Scrambled Eggs
- Sausage
- Avocado
- Chopped Onion
- Chopped Cilantro
- More Cheddar Cheese 🙂
Holy moly, that would be my death row meal. It was absolutely perfect. I’m not even going to try and be humble. My boyfriend said it was the best burrito he’s ever had. Charred Scallion Jalapeño Crema
Ingredients
- 3 Scallion Stalks (cut into thirds)
- 1 Jalapeño
- 1 Shallot (roughly chopped)
- 1 cup Crema
- 1/2 cup Mayo
- 2 1/2 Tbsp Lime Juice
- 1/2 cup Cilantro Leaves
- 2 Garlic Cloves (roughly chopped)
- 1 tsp Kosher Salt
- 1/2 tsp Ground Black Pepper
- 3 Tbsp Water
Instructions
- Heat a cast iron pan over high heat. Add the scallions and whole jalapeño to the pan. Cook the scallions for about 2 minutes on each side until charred then remove them from the pan. Cook the jalapeño on all sides for 2-3 minutes until most of the outside has been charred. Remove it from the pan.
- Roughly chop the jalapeño. You can remove the seeds from the jalapeño if you want the sauce to be less spicy. If you want the sauce a little spicier you can add in some of the pith and seeds.
- Add everything to a blender. Blend until smooth and it turns a pale green color. Add another tablespoon of water to adjust the consistency if desired. Enjoy!
