Elevate Your Salad Kit

I think we can all agree that salad kits are a lifesaver. They make it so easy to incorporate vegetables into your meal, and it takes out time from having to chop all the ingredients. After trying out all the different flavors and brands, I’ve found that the “Sweet Kale” mix tends to be my favorite. Trader Joe’s version of it is their Broccoli and Kale Slaw Kit. Another great thing about these kits is that you can eat them as is or dress them up. I created this Easy Sweet Kale Salad that transforms the simple sweet kale salad mix into an elevated and complete meal. It’s tossed with roasted chicken, bacon bits, bleu cheese, apples, and red onion. And for a little extra pizazz, we’re topping it with balsamic glaze. This salad is delicious and so easy since the base is already prepared.

Toss and Enjoy

For this recipe, you can make it even simpler by using pre-cooked chicken or a rotisserie chicken and dicing it into small cubes. However, if you want to cook your chicken at home, follow these few, simple steps: coat 1 large chicken breast with olive oil and season both sides with salt and pepper; place it on a baking sheet and cook it in the oven at 375˚F for 20-25 min until fully cooked; set it aside to cool then dice into pieces.

Once you have your chicken ready, it’s essentially the beginning of the end — thats how easy it is. Empty the salad kit into a large bowl along with the package of mix-ins. Set aside the dressing. Add in the diced chicken, bacon, apples, bleu cheese, and red onion. Open the packet of dressing and pour it all over top. Toss the salad together until well combined. Drizzle balsamic glaze on top and serve.

The Salad Hack

This Easy Sweet Kale Salad is such a great recipe if you’re getting bored with the same old salad kits and want something more exciting. If you want a salad as your main meal, this is a delicious way to get some protein in the mix. It’s also an easy hack if you’re not the best cook or a lazy cook. We’ve all been invited to a potluck when we don’t feel like cooking, so this is a great dish that doesn’t require a lot of work but you can still pass it off as homemade. It’s sweet, savory, crunchy, tangy, and a has a bite from the pungent bleu cheese. I could honestly eat this Easy Sweet Kale Salad every day and it truly makes eating salads more fun!

Ingredients
  

  • 1 package Sweet Kale Salad Mix
  • 1 Cooked Chicken Breast (diced)
  • 3 Cooked Bacon Strips
  • ¾ cup Diced Apples (½ inch dice)
  • ½ cup Crumbled Bleu Cheese
  • ⅓ cup Thinly Sliced Red Onion
  • Balsamic Glaze (for drizzling)

Instructions
 

  • Empty the salad kit into a large bowl as well as the package of mix-ins. Set aside the dressing.
  • Add in the diced chicken, bacon, apples, bleu cheese, and red onion. Open the packet of dressing and drizzle it all over top. Toss the salad together until well combined. Drizzle balsamic glaze on top and serve. Enjoy!

Notes
