Berry Season
I think we can all agree that one of many great things about summer is the abundance of berries. There are a variety of recipes you can make with berries and so many flavors you can pair them with. I thought I’d keep it fresh and light today, in the spirit of summer, and post this Mixed Berry Salad recipe!
Keeping it Fresh
Up until this point, I haven’t really been inspired to make any salad recipes. I think I had so many other recipes I wanted to get out to you all that the salad recipes took a backseat. But we’re back in business baby, and this Mixed Berry Salad is one for the books!
This recipe is so delicious and so easy to prepare! It has arugula, strawberries, blueberries, blackberries, sliced red onions, sliced almonds, crumbled goat cheese, and sliced avocado. All you have to do is mix the dressing together then toss everything together.
This Mixed Berry Salad is served with a Poppyseed Dressing that is equally as easy to make. These little poppyseeds add a little bit of texture, contrast, and visual appeal. You have these juicy colorful berries lightly coated with tiny specks of poppyseeds. It all comes together to create a rainbow-filled salad.
The Best Summer Salad
I don’t know about you, but this Mixed Berry Salad screams summer to me. It’s definitely a fruitier take on a typical salad but I guarantee that it tastes absolutely delicious. I went on a picnic with my sister and her boyfriend this past weekend and this salad would’ve been the perfect addition! Mixed Berry Salad with Poppy Seed Dressing
Ingredients
For the Mixed Berry Salad
- 3 cup Arugula
- 1/2 cup Halved and Quartered Strawberries
- 1/2 cup Blueberries
- 1/2 cup Blackberries
- 1/2 Small Red Onion (sliced)
- 1/4 cup Sliced Almonds
- 1/4 cup Crumbled Goat Cheese
- 1/2 Avocado (sliced)
For the Poppy Seed Dressing
- 1/4 cup Extra Virgin Olive Oil
- 1 1/2 tbsp White Wine Vinegar
- 1 tbsp Honey
- 1 tsp Dijon Mustard
- 1/2 tbsp Popy Seeds
- Pinch of Salt
Instructions
For the Mixed Berry Salad
- In a large bowl, gently toss together the arugula, strawberries, blueberries, blackberries, sliced red onions, and sliced almonds. Top the salad with the crumbled goat cheese and avocado slices. Serve the salad alongside the Poppy Seed Dressing
For the Poppy Seed Dressing
- Combine all of the ingredients in a bowl and whisk until the ingredients are fully combined.
