Family Time!
Okay, I’m just gonna keep it real and let you know that this is going to be a sweet and simple post. I’m currently on a road trip with my family (who I haven’t seen in about 7 months) and I just really want to live in the moment and spend time with them. If I were smarter, I would’ve typed up a post in advance before this trip. But I didn’t and sometimes that’s just the way it is LOL. However, do not disregard this Pumpkin Spice Blondies recipe because it is pretty freaking good.
Fall Is In The Air
This is your typical delicious blondie base mixed together with cinnamon, ginger, and nutmeg to give it that pumpkin spice taste! I swear as it bakes in the oven, you’re engulfed in all things Fall. The smell of the spices hit you and fill the room. I also decided to mix in some white chocolate because why not? Who doesn’t love a little extra sweetness?
With the amount of times I tested this recipe, I don’t even want to get into the number of blondies I ate within that weekend. It was a sweet, sweet torture — they’re not the healthiest but they tasted so so good. These Pumpkin Spice Blondies are the real deal. They’re thiccc (yeah with 3 c’s), gooey, and chewy — the holy trinity — so brace yourself.

Pumpkin Spice Blondies
Ingredients
- 2 cups All Purpose Flour
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Ginger
- 1/4 tsp Ground Nutmeg
- 1/2 tsp Kosher Salt
- 1/2 tsp Baking Soda
- 1/2 cup Unsalted Butter (melted)
- 6 tbsp Vegetable Oil
- 1/2 cup Granulated Sugar
- 1 cup Dark Brown Sugar
- 2 Large Eggs + 1 Yolk
- 1 tsp Vanilla Extract
- 1 1/4 cup White Chocolate Chips
Instructions
- Preheat the oven to 350˚F. Spray an 8×8 inch pan with cooking spray and line the pan with parchment paper.
- In a medium sized bowl, add in the flour, cinnamon, ginger, nutmeg, salt, and baking powder. Mix with a whisk until the ingredients are evenly distributed.
- In a large bowl, add in the melted butter, vegetable oil, granulated sugar, and dark brown sugar. Mix with a whisk until the ingredients are combined. Add in the eggs and vanilla extract and mix until fully combined. Pour in the flour mix and gently mix it into the wet ingredients with a rubber spatula. Add in the white chocolate chips and gently fold them into the batter until they are evenly distributed throughout.
- Pour the blondie batter into the prepared pan and spread it into an even layer. Bake it in the oven for about 30 minutes. When a toothpick is inserted into the center of the blondie it should come out with a few moist crumbs. The edges should be set and the center should be slightly soft. Allow the blondies to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Use a knife to cut them into 9 even squares. Enjoy!
