Happy (Almost) Halloween!!!
Happy (early) Halloween!! I seriously cannot believe Halloween is this weekend! Time is flying by — I swear it was August just yesterday! Before we know it, we’re going to be swept up in the craziness of the holiday season. But let’s not get ahead of ourselves just yet! As we all know, it’s a little disappointing to finally have Halloween on a Saturday and not be able to celebrate it as we normally would. However, you can still find ways to get into the spooky season! One fun activity you could do is bake up a batch of these Reese’s Stuffed Chocolate Cookies! 😉
Favorite Halloween Candy
But before we get into anything, I have to ask: What is your favorite Halloween candy?! When it comes to candy, I prefer chocolate over sour, gummy candy. Anything that’s chocolate and has some sort of crunchy texture inside is right up my alley! Twix, KitKat, Crunch, Hershey’s Cookies n’ Creme, and of course, Reese’s Peanut Butter Cups are all some of my personal favorites.
Before college, I feel like Reese’s Peanut Butter Cups weren’t even on my radar. I didn’t love them but I also didn’t hate them. For some reason, in college, I started craving Reese’s Peanut Butter Cups. It was super strange because this craving came out of nowhere, but now I’m proud to announce that I’m a Reese’s lover. With that said, these Reese’s Stuffed Chocolate Cookies are a dedication to my newfound love. We have a Reese’s Peanut Butter Cup wrapped in chocolate cookie dough, which is then topped with Reese’s Pieces! It’s the perfect chewy chocolate cookie with a peanut butter surprise!

With Halloween being “cancelled,” I felt I didn’t really have an excuse to go out and buy a big ole’ bag of candy. But now that I have this delicious cookie recipe, we all have the perfect excuse to stock up on candy! And you know what’s even better? With these Reese’s Stuffed Chocolate Cookies you’re not only getting candy, but also a mother-freaking COOKIE!
I really do hope you all try this recipe out! Halloween or not, these Reese’s Stuffed Cookies make for a delicious and indulgent treat. Also, let me know what your plans are for this Halloween! Reese’s Stuffed Chocolate Cookies
Ingredients
- 1 1/4 cups + 2 tbsp All Purpose Flour
- 1/4 cup Cocoa Powder
- 1/4 tsp +1/8 tsp Baking Soda
- 1/8 tsp Baking Powder
- 1/2 tsp Kosher Salt
- 1/2 cup (1 stick) Unsalted Butter (melted)
- 1/2 cup + 2 tbsp Dark Brown Sugar
- 1/3 cup Granulated Sugar
- 1 Large Egg + 1 Large Egg Yolk
- 1/2 tsp Vanilla Extract
- 12 Snack Size Reese's Peanut Butter Cups (unwrapped)
- 3/4 cup Reese's Pieces
Instructions
- In a large bowl, combine the flour, cocoa powder, baking soda, baking powder, and salt. Mix with a whisk until the ingredients are evenly combined.
- In a separate bowl, mix the melted butter, brown sugar, and granulated sugar together. Add in the egg, egg yolk, and vanilla extract. Mix until the ingredients are combined
- Pour the wet mixture into the bowl of dry ingredients. Use a rubber spatula to mix the ingredients until the dough comes together. Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.
- Preheat the oven to 350˚F. Line a few baking trays with parchment paper.
- Remove the dough from the fridge. Take about 1 tbsp of dough and slightly flatten it. Place a Reese's peanut butter cup on top of the dough then cover it with another tablespoon of dough. Shape the two pieces of dough around the peanut butter cup sealing any gaps or seams. The cookie dough should completely encompass the peanut butter cup. Repeat this process to make the remaining cookies.
- Place the cookies onto the baking tray, spacing them about 2 inches apart. Press the Reese's Pieces onto the tops of the cookies then bake them for about 13-15 minutes. The cookies should be set on the outside and soft in the center. Remove the cookies from the oven and allow them to cool on the baking tray for 5 minutes before transferring them to a cooling rack. Enjoy!
