Mixed Berry Salad with Poppy Seed Dressing

A fresh and colorful summer salad made with arugula, mixed berries, goat cheese, sliced red onions, avocado, and sliced almonds tossed with a poppy seed dressing!

Ingredients

For the Mixed Berry Salad

  • 3 cup Arugula
  • 1/2 cup Halved and Quartered Strawberries
  • 1/2 cup Blueberries
  • 1/2 cup Blackberries
  • 1/2 Small Red Onion (sliced)
  • 1/4 cup Sliced Almonds
  • 1/4 cup Crumbled Goat Cheese
  • 1/2 Avocado (sliced)

For the Poppy Seed Dressing

  • 1/4 cup Extra Virgin Olive Oil
  • 1 1/2 tbsp White Wine Vinegar
  • 1 tbsp Honey
  • 1 tsp Dijon Mustard
  • 1/2 tbsp Popy Seeds
  • Pinch of Salt

Instructions

For the Mixed Berry Salad

  • In a large bowl, gently toss together the arugula, strawberries, blueberries, blackberries, sliced red onions, and sliced almonds. Top the salad with the crumbled goat cheese and avocado slices. Serve the salad alongside the Poppy Seed Dressing

For the Poppy Seed Dressing

  • Combine all of the ingredients in a bowl and whisk until the ingredients are fully combined.
