Vegan Avocado Pesto
A delicious, easy, and vegan pesto recipe!
- 1/3 cup Walnuts
- 2 Garlic Cloves
- 1/2 Avocado (roughly chopped)
- 2 tbsp Nutritional Yeast
- 1 tsp Lemon Zest
- 3 tbsp Lemon Juice
- 1/2 tsp Kosher Salt
- 1 1/2 packed cups of Basil Leaves
- 1/4 cup + 2 tbsp Extra Virgin Olive Oil
Heat a small pan over medium heat. Add the walnuts to the pan. Cook for about 5 minutes until the oils release and the walnuts are toasted.
Remove the walnuts from the pan then transfer them to a food processor. Add the remaining ingredients into the food processor. Blend the ingredients together until you get a smooth paste. Enjoy!
