Ingredients
3Scallion Stalks(cut into thirds)
1Jalapeño
1Shallot(roughly chopped)
1cupCrema
1/2cupMayo
2 1/2TbspLime Juice
1/2cupCilantro Leaves
2Garlic Cloves(roughly chopped)
1tspKosher Salt
1/2tspGround Black Pepper
3TbspWater
Instructions
Heat a cast iron pan over high heat. Add the scallions and whole jalapeño to the pan. Cook the scallions for about 2 minutes on each side until charred then remove them from the pan. Cook the jalapeño on all sides for 2-3 minutes until most of the outside has been charred. Remove it from the pan.
Roughly chop the jalapeño. You can remove the seeds from the jalapeño if you want the sauce to be less spicy. If you want the sauce a little spicier you can add in some of the pith and seeds.
Add everything to a blender. Blend until smooth and it turns a pale green color. Add another tablespoon of water to adjust the consistency if desired. Enjoy!
