Ingredients
1cupPancake Mix(I used Krustaez)
1tspPumpkin Pie Spice
1tbspPumpkin Puree
2/3cupwater
As NeededVegetable Oil(for frying)
16Pumpkin Spice Oreos
As NeededPowdered Sugar (for topping)
As NeededPumpkin Pie Spice(for topping)
OptionalVanilla Ice Cream(for serving)
OptionalSalted Caramel Sauce(for serving)
Instructions
Add the pancake mix, pumpkin pie spice, pumpkin puree, and water to a bowl. Mix with a whisk until combined. Let the batter sit for 5 minutes to thicken.
Heat a small-medium sized pot 1/3 of the way up with vegetable oil. Heat it to 375°F. Use a fork to dip the pumpkin spice Oreos into the pancake batter, making sure all sides are coated. Lift the Oreo out of the batter, allowing the excess to drip off. Working in batches, add the battered Oreos to the hot oil and fry for 45 seconds on each side until golden brown and crispy. Remove the Oreos from the oil and place them onto a cooling rack lined with paper towels to drain.
Dust powdered sugar and a bit of pumpkin pie spice on top of the Oreos. Serve with vanilla ice cream and a drizzle of salted caramel sauce if desired. Enjoy!
