In a small bowl, combine the cinnamon, nutmeg, ginger, and cloves. Set aside. Slice the vanilla bean down the center lengthwise and open the pod expose the seeds. Use the back of your knife to scrape out the seeds and set aside.
Heat a small sauté pan or pot over medium heat. Add in the butter or coconut oil and melt. Once the fat has melted add in the plums, spice mix, maple syrup, lemon juice, salt, and the scraped vanilla seeds and bean. Stir with a rubber spatula.
Cook the plums until some of the juices have been released and thicken. The plums should be slightly cooked, about 3-5 minutes depending on how ripe your plums are. Once the plums have cooked, serve it with greek yogurt and granola. Enjoy!
