A Peachy Summer

I’ve been seeing butter swim biscuits all over my social feeds, and I absolutely had to make them. If you haven’t heard of butter swim biscuits, it’s a quick mix biscuit dough that’s baked in a pan with melted butter. This method creates a brown, crispy outer crust and the inside is moist and fluffy where it’s almost cake-like. Since it’s summer, I wanted to utilize the best of summer produce and add in some peaches. These Brown Sugar Peach Butter Swim Biscuits are mixed with brown sugar peaches, layered with a cinnamon sugar, then topped with a brown sugar streusel. It’s almost an ode to a peach cobbler but in biscuit form, and it is too good!

Step By Step

First we’ll start with making the brown sugar streusel. Add the flour, brown sugar, cinnamon, and salt into a bowl. Whisk the ingredients together until evenly distributed. Add in the butter. Use the tips of your fingers to rub the butter into the flour mixture until you get a crumbly dough that feels like wet sand. Set it aside in the fridge.

Next, we’ll macerate the peaches. Toss the diced peaches and brown sugar together in a bowl. Let it sit for 15 minutes. This process helps to draw out some of the juices so that the biscuits don’t get soggy. Drain the peaches from any liquid that has been released. Set the peaches aside and discard the liquid. For the cinnamon sugar, add the sugar, flour, and cinnamon into a bowl. Mix until combined then set it aside.

Hot and Fluffy

Now that we’ve got all the components ready, it’s time for the biscuit dough! Preheat the oven to 400˚F. Add the flour, baking powder, granulated sugar, and salt into a large bowl. Whisk the dry ingredients together until evenly combined. In a separate bowl, whisk together the buttermilk, vanilla extract, and lemon zest. Pour the wet ingredients into the bowl of dry ingredients. Gently fold the ingredients together until 75% combined. Add in the drained peaches then continue to fold everything together until there’s no more clumps of flour.

Place the unsalted butter in a 8×8 inch square baking pan. Place it in the preheated oven for a few minutes until the butter is completely melted. Remove the pan from the oven then spread half of the biscuit dough into an even layer on the bottom of the pan. Sprinkle the cinnamon sugar mixture all over top. Spread the remaining biscuit dough on top. Finish with crumbling the streusel on top. Use a knife to cut the dough into 9 squares. Place it in the oven to bake for 35-40 minutes until the top is browned and the biscuits are cooked through. Remove the biscuits from the oven and let them sit for about 5 minutes before slicing.

Peach Cobbler x Biscuit

These Brown Sugar Peach Butter Swim Biscuits are a must-make before the summer ends. The cinnamon and brown sugar compliment the sweetness of the peaches and add almost a caramelized flavor. It’s homey and cozy from those warm spices but still fresh when you get a bite with the peaches. The texture of these biscuits are too incredible. The edges get brown and crispy from the butter, but the inside is so moist and fluffy. I also love how the streusel on top adds a sugary crunch. These Brown Sugar Peach Butter Swim Biscuits are truly the best combination of a peach cobbler and a buttery biscuit. Try them out and let me know what you think!

Ingredients
  

For the Streusel Topping:

  • ⅓ cup All Purpose Flour
  • ⅓ cup Dark Brown Sugar
  • ½ tsp Cinnamon
  • ⅛ tsp Salt
  • 4 tbsp Cold Unsalted Butter (diced into pieces)

For the Brown Sugar Peaches:

  • 1 Peach (diced)
  • 2 tbsp Dark Brown Sugar

For the Cinnamon Sugar:

  • 3 tbsp Dark Brown Sugar
  • 1 tbsp All Purpose Flour
  • 1 tsp Cinnamon

For the Biscuits:

  • 2 ½ cups All Purpose Flour
  • 4 tsp Baking Powder
  • ¼ cup Granulated Sugar
  • 1 tsp Salt
  • 1 ⅔ cup Buttermilk
  • 1 tsp Vanilla Extract
  • Zest from ½ a Lemon
  • 6 tbsp Unsalted Butter melted

Instructions
