For the Streusel Topping:

1Peach (diced)

Instructions
For the Streusel Topping:
Add the flour, brown sugar, cinnamon, and salt into a bowl. Whisk the ingredients together until evenly distributed. Add in the butter. Use the tips of your fingers to rub the butter into the flour mixture until you get a crumbly dough that feels like wet sand. Set it aside in the fridge.
For the Brown Sugar Peaches:
Toss the diced peaches and brown sugar together in a bowl. Let it sit for 15 minutes to draw the juices out. Then drain the peaches from any liquid that has been released. Set the peaches aside and discard the liquid.
For the Cinnamon Sugar:
Add the sugar, flour and cinnamon into a bowl. Mix until combined then set it aside.
For the Biscuits:
Preheat the oven to 400˚F.
Add the flour, baking powder, granulated sugar, and salt into a large bowl. Whisk the dry ingredients together until evenly combined. In a separate bowl, whisk together the buttermilk, vanilla extract, and lemon zest.
Pour the wet ingredients into the bowl of dry ingredients. Gently fold the ingredients together until 75% combined. Add in the drained peaches then continue to fold everything together until there's no more clumps of flour.
Place the unsalted butter in a 8x8 inch square baking pan. Place it in the preheated oven for a few minutes until the butter is completely melted. Remove the pan from the oven then spread half of the biscuit dough into an even layer on the bottom of the pan. Sprinkle the cinnamon sugar mixture all over top. Spread the remaining biscuit dough on top. Finish with crumbling the streusel on top.
Use a knife to cut the dough into 9 squares. Place it in the oven to bake for 35-40 minutes until the top is browned and the biscuits are cooked through. Remove the biscuits from the oven and let them sit for about 5 minutes before slicing. Enjoy!
