Trader Joe’s Is The Way to Go
Today’s Curried Chicken Salad recipe is inspired by Trader Joes’ curried chicken salad! I love Trader Joe’s, but I definitely don’t shop there as much as I would like to for multiple reasons:
- I have a Vons right across the street from my apartment so that’s super convenient
- The crowds at Trader Joe’s kinda overwhelms me and makes me feel like I can’t take the time to look at everything.
- There’s just so much to look at and 99% of the time I want everything, so I never know what to get.
However, I’m trying to be better at cooking food at home on the weekends instead of ordering delivery. So I thought what better way to make cooking more fun than to buy your ingredients from Trader Joe’s?!
A few weeks ago, I bought a curried chicken salad from TJ’s. Overall, it was a great dish. There were elements that I liked and elements of it that I would change to something else. With these thoughts, I felt inspired to create my own Curried Chicken Salad recipe that met my own personal criteria!
One Step Recipe
This Curried Chicken Salad is a super simple recipe that’ll leave you with plenty of leftovers for the week. The main components of it are diced cooked chicken, red onion, green onion, dried cranberries, walnuts, and curry powder. You can make your life easier and dice up a rotisserie chicken or you can roast your own chicken! The cranberries add a burst of sweetness and the walnuts give the salad a textural crunch. This is a one step recipe — all you have to do is add everything to a bowl and mix it together!
Multiple Meals in One
There are so many ways you can serve this Curried Chicken Salad:
- Put it on a piece of toast and you have an open-faced sandwich.
- Serve it with some greens to make a salad
- Add arugula and bread to make a sandwich.
- Serve it with butter or Boston lettuce for chicken lettuce cups.
- Wrap it in a tortilla to make a wrap.
- Add it into a pita with fresh veggies and a yogurt sauce!
The options are endless, people! You could have a different dish with this Curried Chicken Salad every day of the week!

Curried Chicken Salad
Ingredients
- 4 cups Diced Cooked Chicken
- 1 cup Diced Red Onion
- 1/2 cup Sliced Green Onions
- 3/4 cup Chopped Walnuts
- 3/4 cup Dried Cranberries
- 3/4 cup Mayo
- 1/2 tbsp Dijon Mustard
- 1/2 tbsp Lemon Juice
- 1 1/2 tbsp Curry Powder
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1 tsp Garlic Powder
Instructions
- Add all of the ingredients into a large bowl and mix until combined! Enjoy!
