Work Hard Eat Well

Listen, we’re all busy bees doing our own thing. School is in session and we’re workin’ hard in the office. The last thing you want to do when you come home is make dinner. I get it. And that is why I’m sharing this Easy Ginger Scallion Tilapia Recipe with you!

My mom actually created and inspired this recipe. So thank you, Mother! Besides myself, my dad is the only other person in my family that cooks. We’re breaking gender roles people! However, when my mom did cook, it would often be this Easy Ginger Scallion Tilapia recipe. It is so simple, but it has come to be one of my favorite dishes. We usually serve this with rice and sautéed bok choy. Sometimes, the simplest meals are the best meals.

The Superior Sweet Soy Sauce

I know that regular soy sauce is awesome, but sweet soy sauce is my homegirl. This might be due to the fact that I have more of a sweet tooth, but for those of you who didn’t know that sweet soy sauce existed, I would encourage you to buy a bottle of it and use it for everything you eat.

The sweetness of it compliments the flavors of the ginger and scallion so well. You get a little heat from the ginger, which contrasts (in a good way) the sweetness of the sweet soy sauce, and the scallion gives off a garlicky flavor.

Even though it’s so simple, it tastes amazing, and can easily become one of your go-to meals. You can even complete this recipe in the Lam Style, serving it with rice and sautéed bok choy! YUM! As always, thanks for reading, and I’ll talk to you in my next post!

Servings 4 people

Ingredients

  • 4 Tilapia Filets
  • 1 tbsp Vegetable Oil
  • ½ inch knob of Ginger (thinly sliced into sticks)
  • 2 stalks of Green Onion (thinly sliced into sticks)
  • 2 Garlic Cloves (roughly chopped)
  • ½ tsp Sesame Oil
  • ⅓ cup Sweet Soy Sauce
  • Additional Shredded Green Onions (for topping)

Instructions

  • Preheat the oven to 425˚F
  • Lightly coat the tilapia filets with some of the vegetable oil and season both sides with salt and pepper. Lay the filets onto a sheet tray lined with foil. When the oven has preheated, place the tray into the oven and cook for about 10 minutes or until the fish reaches an internal temperature of 135˚F.
  • Heat a small pan over medium high heat. Add in the remaining vegetable oil and sesame oil. Then add in the ginger, scallions, and garlic. Sauté until the ginger, scallions, and garlic become fragrant and slightly brown. Then pour in the sweet soy sauce. Remove the sauce from heat. Spoon some of the ginger and scallion sauce over the fish. Top with fresh shredded green onions. Enjoy!
