
Cooking Basics
This Peach Tomato Salad is for all of you out there who don’t necessarily love to cook, but you love food. I can totally understand how cooking may seem intimidating and arduous, but there are so many recipes out there that are actually so simple. And this Peach Tomato Salad is one of them! Fresh peaches and tomatoes are tossed with mozzarella balls, red onion, mint, basil, and a peach vinaigrette. This recipe requires no cooking and minimal culinary skills, but it tastes amazing. Even if you’re just looking for an easy summer salad or side dish, this will be perfect!

Part 1 + Part 2
The first part to this recipe is making the vinaigrette. All you need is 5 ingredients, and 2 of them are salt an pepper. Add olive oil, peach cider vinegar, and honey into a bowl. Whisk until combined then season with salt and pepper to taste. I used Fresh Press Farms’ Peach Cider Vinegar, but if you don’t have that on hand you can use lemon juice or apple cider vinegar instead. And just like that, half the recipe is done!
Moving on to part two, we’re assembling the salad. Add the peaches, tomatoes, red onion, and ciliegine into a large bowl. Roughly tear the basil and mint leaves into small pieces and add it into the bowl. This helps to release their natural oils and aromas. Pour in the vinaigrette and toss everything together until well coated. Season with salt and black pepper, and you can call it a day!

It’s one of those salads that will be at a restaurant for $20; but when you realize how quick and simple it is to make at home, you’ll never look back. Peach Tomato Salad
Ingredients
For the Peach Honey Vinaigrette:
- ½ cup Olive Oil
- 3 tbsp Fresh Press Farms' Peach Cider Vinegar (you can also use lemon juice or apple cider vinegar)
- 1½ tbsp Honey
- Pinch of Salt and Pepper
For the Peach Tomato Salad:
- 4 Peaches (cut into wedges)
- 2 Large Heirloom Tomatoes (cut into wedges)
- ⅔ cup Thinly Sliced Red Onion
- 8 oz Ciliegine Mozzarella (drained and halved)
- ¼ cup Torn Fresh Basil Leaves
- 2 tbsp Torn Fresh Mint Leaves
- Salt and Pepper to taste
Instructions
For the Peach Honey Vinaigrette:
- Add all of the ingredients into a bowl and whisk it together until well combined.
For the Peach Tomato Salad:
- Add the peaches, tomatoes, red onion, ciliegine, basil, and mint into a large bowl. Pour in the vinaigrette and toss everything together until well coated. Season with salt and black pepper. Enjoy!
