Peach Tomato Salad

A fresh and easy peach and heirloom tomato salad with red onion, mozzarella, basil, mint, and a peach honey vinaigrette!

Ingredients

For the Peach Honey Vinaigrette:

  • ½ cup Olive Oil
  • 3 tbsp Fresh Press Farms' Peach Cider Vinegar (you can also use lemon juice or apple cider vinegar)
  • tbsp Honey
  • Pinch of Salt and Pepper

For the Peach Tomato Salad:

  • 4 Peaches (cut into wedges)
  • 2 Large Heirloom Tomatoes (cut into wedges)
  • cup Thinly Sliced Red Onion
  • 8 oz Ciliegine Mozzarella (drained and halved)
  • ¼ cup Torn Fresh Basil Leaves
  • 2 tbsp Torn Fresh Mint Leaves
  • Salt and Pepper to taste

Instructions

For the Peach Honey Vinaigrette:

  • Add all of the ingredients into a bowl and whisk it together until well combined.

For the Peach Tomato Salad:

  • Add the peaches, tomatoes, red onion, ciliegine, basil, and mint into a large bowl. Pour in the vinaigrette and toss everything together until well coated. Season with salt and black pepper. Enjoy!
