Ice cream is one of those desserts that I will happily eat year round no matter how cold it is. It always has its place especially with all the festive holiday flavors that come out as the seasons change. I’ve also never met anyone who doesn’t like ice cream, so it’s always a safe bet as a dessert option. These Peppermint Stroopwafel Ice Cream Sandwiches are honestly such an easy yet festive holiday dessert. The holidays can be chaotic with all the cooking, and the last thing you need to worry about is making an elaborate dessert. These Peppermint Stroopwafel Ice Cream Sandwiches are such a great recipe to alleviate any further stress while still showing up with a fun dessert. Stroopwafel cookies are dipped in melted chocolate and coated with crushed peppermint. Then it’s sandwiched together with peppermint ice cream!

Stroopwafel Sandwich
First, add the chopped chocolate into a microwave safe bowl. Microwave it in 15 seconds intervals, mixing after each session, until the chocolate is melted. Dip each stroopwafel into the melted chocolate until it coats about ⅓ of the stroopwafel. Run an offset spatula against the surface of the chocolate to scrape off any excess to ensure it’s a thin coating. Place it on a baking sheet lined with parchment paper. Sprinkle the crushed peppermint onto the chocolate.
Set the stroopwafels aside until the chocolate hardens. You can place them into the fridge to speed up the process. When ready to serve, sandwich two stroopwafels with a scoop of vanilla ice cream. Enjoy!
