Bleu Cheese Appreciation

I know everyone is on the whipped brie train, but what about whipped bleu cheese? I know bleu cheese can be very polarizing. It’s potent and has a distinct savory flavor profile that isn’t everyone’s cup of tea. I actually was not a fan of bleu cheese when I was younger, but over the past few years I’ve come to love it. One thing that changed my view on bleu cheese is the foods I paired with it. I’m a huge sweet and savory lover, so I love eating bleu cheese with fig jam and prosciutto. That right there is my perfect, heavenly charcuterie bite. If you love bleu cheese, you know what I’m talking about. So this Whipped Bleu Cheese with Peach Compote goes out to all my bleu cheese lovers. Even if you’re on the fence about bleu cheese, I think this recipe could win you over with its silky texture and sweet and savory flavors.

A New Summer Charcuterie

This Whipped Bleu Cheese with Peach Compote is such an easy appetizer to make for the summer. The bleu cheese whips so perfectly; it comes out with the most buttery, luxurious texture. Then it’s topped with a simple homemade peach compote. The sweetness of the peaches compliments the salty and savory flavors of the bleu cheese so nicely. This is a fun way to switch it up from your traditional charcuterie board, or you can even add this onto your summer charcuterie board.

To make the peach compote, add the peaches, water, honey, lemon juice, and thyme sprigs into a small pan or sauce pot. Heat it over medium heat until the juices start bubbling. Reduce the heat to medium low and cook for about 8 minutes until the peaches turn slightly jammy. Remove the peaches from the pan to cool.

The Best Bleu Cheese

The most crucial part of this recipe is to make sure you purchase a soft bleu cheese. You want one that has the same soft, squishy texture of brie. I used St. Agur Bleu Cheese for this recipe. I honestly recommend you to use the same if it’s available in your grocery store. It’s high in fat, which makes it soft enough to whip in the food processor. Additionally, the high fat content is what makes it taste so buttery and silky after it’s whipped. This cheese already tastes amazing as is, so I knew it would be perfet for this recipe. Make sure the cheese is softened at room temperature. Then if your bleu cheese has a thick or hard rind, shave it off.

Add the bleu cheese into a food processor. Blend until the cheese is whipped and smooth. Spread the whipped bleu cheese onto the serving plate. Top with the peach compote in the center. Drizzle on some olive oil then top with flaky salt and thyme leaves. If desired, drizzle more honey on top as well. Enjoy!

The Best Bite

I’m a believer that everyone who doesn’t like bleu cheese should try it again each year to see if their palate has changed. Bleu cheese is too good to miss out on — especially when made into this Whipped Bleu Cheese with Peach Compote! Like I’ve already stated, the whipped bleu cheese has the silkiest, butteriest texture. Then the peach compote is the perfect sweet component to pair with it. The flavors blend so harmoniously. Top it off with a slice of cured meat, and that will be the best bite of your life. Ingredients
  

  • 2 Peaches ½ inch dice
  • ¼ cup Water
  • 1 ½ tbsp Honey
  • 1 tbsp Lemon Juice
  • 2 Thyme Sprigs
  • 10.5 oz Soft Bleu Cheese at room temperature (I used St. Agur)
  • Olive Oil (for topping)
  • Flaky Salt (for topping)
  • Fresh Thyme Leaves (for topping)
  • Additional Honey (for topping)
  • Crackers (for serving)
