Whipped Ricotta & Olive Dip

It’s Dip Season

As the weather gets warmer, there’s going to be more parties and potlucks. So it’s important to have a trustworthy list of dishes you can whip up. One of my favorite dishes to make is my Whipped Ricotta & Olive Dip. It takes no time at all to come together, and it honestly looks like an elevated dish you’d get at a restaurant. It’s a simple olive mixture combined with roasted red peppers served on a creamy bed of whipped ricotta spread. The combination of the mild, creamy ricotta pairs so well with the pungent flavor of the olives. If you’re an olive lover, this Whipped Ricotta & Olive Dip is right up your alley!

Whipped Ricotta At Home

Whipped ricotta is one of the trendier foods served at many restaurants nowadays. Little did you know it’s actually ridiculously easy to make at home. Simply add the ricotta, olive oil, heavy cream, and a pinch of salt and pepper to a food processor. Blend until the mixture is smooth and creamy, and that’s literally all there is to it. It’s a great base for all different types of dips and a delicious topping for pizza or pasta.

Moving onto the olive dip, add the olives, roasted red bell pepper, parsley, garlic, calabrian chili paste, lemon zest and olive oil to a bowl. Mix everything together until combined. Season with salt and black pepper to taste. Spread the whipped ricotta in an even layer on the serving platter. Spoon the olive mixture on top of the whipped ricotta. Drizzle additional olive oil on top. Add a drizzle of honey if desired and enjoy!

Olives & Charcuterie

This Whipped Ricotta & Olive Dip is going to be a hit at any party. Place it next to a charcuterie board and you’ve got the perfect pairing. It’s so easy to make, and you can prepare the components ahead of time so you don’t have to sweat when guests arrive. The creamy richness of the whipped ricotta is the perfect balance to the salty, briny olives. Don’t get me wrong, I love a hot and cheesy dip, but there’s a lovely freshness to a chilled dip. Whipped Ricotta and Olive Dip

Ingredients
  

For the Whipped Ricotta:

  • 1 cup Whole Milk Ricotta Cheese
  • ½ tbsp Olive Oil
  • 1 ½ tbsp Heavy Cream
  • Pinch Salt and Black Pepper

For the Olive Dip:

  • 1 (10.6 oz) Jar Castelvetrano Olives (roughly chopped)
  • 2 Pieces Roasted Red Bell Pepper from the jar (diced)
  • 2 tbsp Chopped Parsley
  • 1 Garlic Clove (thinly sliced)
  • ½ tsp Calabrian Chili Paste or ¼ tsp Red Pepper Flakes
  • Zest from ½ a Lemon
  • 1 tbsp Olive Oil
  • Honey for drizzling over top (optional)

Instructions
 

For the Whipped Ricotta:

  • Add the ricotta, olive oil, heavy cream, and a pinch of salt and pepper to a food processor. Blend until the mixture is smooth and creamy. Set aside.

For the Olive Dip:

  • Add the olives, roasted red bell pepper, parsley, garlic, calabrian chili paste, lemon zest and olive oil to a bowl. Mix until combined. Season with salt and black pepper to taste.
  • Spread the whipped ricotta in an even layer on the serving platter. Spoon the olive mixture on top of the whipped ricotta. Drizzle additional olive oil on top. Add a drizzle of honey if desired. Enjoy!
