Reese's Stuffed Chocolate Cookies

Chewy chocolate cookies stuffed with Reese's Peanut Butter Cups and topped with Reese's Pieces!

Ingredients

  • 1 1/4 cups + 2 tbsp All Purpose Flour
  • 1/4 cup Cocoa Powder
  • 1/4 tsp +1/8 tsp Baking Soda
  • 1/8 tsp Baking Powder
  • 1/2 tsp Kosher Salt
  • 1/2 cup (1 stick) Unsalted Butter (melted)
  • 1/2 cup + 2 tbsp Dark Brown Sugar
  • 1/3 cup Granulated Sugar
  • 1 Large Egg + 1 Large Egg Yolk
  • 1/2 tsp Vanilla Extract
  • 12 Snack Size Reese's Peanut Butter Cups (unwrapped)
  • 3/4 cup Reese's Pieces

Instructions

  • In a large bowl, combine the flour, cocoa powder, baking soda, baking powder, and salt. Mix with a whisk until the ingredients are evenly combined.
  • In a separate bowl, mix the melted butter, brown sugar, and granulated sugar together. Add in the egg, egg yolk, and vanilla extract. Mix until the ingredients are combined
  • Pour the wet mixture into the bowl of dry ingredients. Use a rubber spatula to mix the ingredients until the dough comes together. Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.
  • Preheat the oven to 350˚F. Line a few baking trays with parchment paper.
  • Remove the dough from the fridge. Take about 1 tbsp of dough and slightly flatten it. Place a Reese's peanut butter cup on top of the dough then cover it with another tablespoon of dough. Shape the two pieces of dough around the peanut butter cup sealing any gaps or seams. The cookie dough should completely encompass the peanut butter cup. Repeat this process to make the remaining cookies.
  • Place the cookies onto the baking tray, spacing them about 2 inches apart. Press the Reese's Pieces onto the tops of the cookies then bake them for about 13-15 minutes. The cookies should be set on the outside and soft in the center. Remove the cookies from the oven and allow them to cool on the baking tray for 5 minutes before transferring them to a cooling rack.
