Healthy Turkey Chili

A delicious and easy turkey chili recipe that'll leave you warm and satiated!

Ingredients

  • 1 tbsp Olive Oil
  • 1 Yellow Onion (diced)
  • 3 Garlic Cloves (minced)
  • 1 lb Ground Turkey
  • 2 tsp Dried Oregano
  • 2 tsp Chili Powder
  • 2 tsp Garlic Powder
  • 1 3/4 tsp Kosher Salt
  • 1 1/2 tsp Paprika
  • 1 1/2 tsp Ground Cumin
  • 1 tsp Ground Black Pepper
  • 1/4 tsp Red Pepper Flakes
  • 1/4 cup Tomato Paste
  • 1 Large Sweet Potato (cut into 1/2 inch cubes)
  • 2 (15 oz) Cans Kidney Beans (drained)
  • 28 oz Crushed Tomatoes
  • 1 1/2 cups Chicken Broth
  • 2 cups Frozen Corn Kernels
  • As Needed Sour Cream (for serving)
  • As Needed Grated Cheddar Cheese (for serving)

Instructions

  • Heat a pot over medium high heat. Pour in the olive oil then add in the onion and garlic. Cook until the onion turns translucent. Add the turkey to the pot. Cook and crumble the turkey until it is fully cooked.
  • Then add in the oregano, chili powder, garlic powder, salt, paprika, cumin, black pepper, and red pepper flakes. Mix until combined then stir in the tomato paste. Add the sweet potatoes, kidney beans, crushed tomatoes, and chicken stock to the pot and mix everything together.
  • Bring the chili to a boil then reduce the heat so that it is simmering. Simmer uncovered for about 35 minutes or until the sweet potatoes are tender. Mix in the corn in the last 5 minutes of cooking. Remove the pot from the heat and serve with sour cream and cheese. Enjoy!
