
Better than Butter
Everyone knows that butter is one of life’s greatest treasures. I really didn’t think it could get any better until I created this Whipped Blueberry Butter. It’s creamy, fluffy, and the perfect balance of fresh yet rich. Butter is whipped in a food processor then blended with a blueberry compote. It’s topped with flaky salt and makes for the perfect spread for any pastry, toast, croissant, or muffin. You name it and it’s guaranteed to be delicious.

Blueberry Compote
To make the blueberry compote, add the blueberries, honey, and kosher salt into a small sauce pot or pan. Heat over medium heat. Once it begins bubbling, mix and reduce the heat to medium low. Simmer for 10 mins and stir occasionally. Remove the blueberry compote from heat then mix in vanilla extract. Transfer the compote into a bowl to cool to room temperature. For quicker cooling, place the bowl in the freezer for 30 minutes and mix every 10 minutes until chilled.
Moving on to the whipped butter, add the softened butter into a food processor. Blend for a few seconds until the butter is whipped and creamy. Scrape down the sides then pour in the chilled blueberry compote. You want to make sure that the compote has completely cooled. Otherwise, the heat from the compote will melt the butter. Blend until the butter and blueberries are well combined. Scrape down the sides every so often. Serve the butter with an additional drizzle of honey and a sprinkle of flaky salt.

It’s safe to say I’m pretty obsessed with this Whipped Blueberry Butter. First of all, the color is stunning. I love seeing the specks of blueberry pieces throughout the butter. Second, the taste is unbeatable. It’s not too sweet or overwhelming. You can still taste the quality of the butter, and the blueberry compote adds a delicious natural sweetness and fruity flavor. The balance of the sweet butter and the savory flaky salt on top makes it addicting. I actually have to resist spreading this on everything. Ingredients
- ½ cup Blueberries
